WATERCRESS GODDESS DRESSING.
The other day we took a drive up our favorite drainage to feel all the early changes of Spring. Things happen a bit slower up in the mountains but we did stumble upon some small nettle plants sprouting along the creekside, a few Spring wildflowers and a magical patch of watercress. Luckily, I packed along my tallest muck boots so I could dip in the murky water and harvest a bit to take home.
Watercress is a one of the oldest known leaf vegetables consumed by humans (thanks Wikipedia). It’s part of the cabbage family and has a bit of a peppery flavor. You can toss it in a salad, use it as a garnish or as a spinach replacement to add a bit more of a kick to any dish. We decided to blend ours into an herby Goddess dressing and have been drizzling the magical sauce on just about everything.
Ingredients
1/4 cup chives
2 cups watercress
1-2 garlic cloves (we used 2 because we can’t get enough of it)
2 anchovy fillets
3 tbsp lemon juice1 heaping tbsp vinegar (we used homemade chive flower vinegar champagne or white wine work great)
1/2 cup canola or grape seed oil
1/2 cup mayonnaise (you can find our homemade mayo recipe here)
salt and pepper to taste
INSTRUCTIONS
In a blender combine watercress, chives, garlic, anchovies, lemon juice and oil. Blend until smooth (2 minutes or so). Add the mayonnaise and blend again until smooth. Add salt and pepper to taste.
