Today, our lovely and talented foodie friend Bridget of Mercurial Provisions is sharing her pickled garlic scape recipe with us. They are perfect for a picnic, a cheese plate, a gift for a friend, and all things Summertime.
For those of you not familiar with a garlic scape, it is the tender stem of a garlic plant. They grow right out of the garlic bulb, then start to coil and are harvested in late Spring, early Summer.
Ingredients
1 bundle of garlic scapes (~6 scapes can be found in a bundle at the farmers market)
1 1/2 cup white vinegar
1 1/2 cup distilled water
2 T kosher salt
2T sugar
5 whole peppercorns (optional)
Pinch of chile flake (optional)
*Recipe makes 2 half pint ball jars*
INSTRUCTIONS
Take clean canning jars and lids set them in a large pot of boiling water for 10 minutes to sterilize the jars.
Lay to try on a clean towel.
Once cooled, coil the garlic scapes into each jar and add in the optional peppercorns and chile flake.
Make a pickle brine by boiling the vinegar, water, salt and sugar in another small pot until the salt and sugar has dissolved.
Pour the hot brine over the garlic scapes, and seal with your sterilized lids (lids are only usable one time so make sure to use new lids if you want them to be shelf stable).
Return sealed jars to hot water sterilization bath and boil for ten minutes.
Place on a towel to cool to room temperature and check to make sure the lid seal is pressed down.
Store in a cool dry place for up to 1 year for best taste.
